Sweet 'n' Sour Red Cabbage
This is fantastic with some great sausages. Made with bacon fat, chopped bacon, three vinegars, thyme, bay  leaf, a tad ground ginger, coriander, sea salt, black pepper, and the  sweetness comes from grated  apple and carrot.
