Ok folks, this soup is my therapy. It's chicken thigh meat with coconut milk, curry & spices, lime, ginger, garlic, coconut oil, red & green bell pepper, hearts of palm, mushroom, and spinach. It is my BEST EVER!
So. Into a soup pot, I put olive oil and coconut oil, and a tad of pastured unsalted butter. Then minced garlic (LOTS), chicken thigh meat (chunked), green & red bell pepper (1 each), sliced mushrooms, chopped tomato, then I ground some sea salt & pepper to season & let simmer. I added a 1/2 of small can of tomato paste. Then sliced hearts of palm (Trader Joe's) and let that all simmer for a few...added mushrooms, and then the spices: I'm guessing about 3 TBS yellow curry powder, 2 Tsp dry basil (crushed up in my fingers or you could use mortar + pestle), 1 tsp thyme, 2 tsp fresh ground coriander, a dash cumin, then added 1 can Trader Joe's coconut milk. Towards the end, after tasting, it needed the fresh juice of one lime and some grated ginger root, which I squeezed in my fist to get all those juices out! Oh, added red chili flakes as well. LAST was the spinach (you want it nice a green for serving and it requires no simmering, just the residual heat from the previously simmering soup). That should be good!
